Detection Principle
蔗糖合成酶催化游离果糖与葡萄糖供体UDPG反应生成蔗糖，蔗糖与间苯二酚反应生成有色物质，产物在480 nm处具有特征吸收峰，通过吸光值变化即可表征蔗糖合成酶的活性。

Notices
①若测定吸光值超出标准线性吸光值范围：高于最高值建议将粗酶液适当稀释后再进行测定；低于最低值建议适当增加样本量重新制备粗酶液后再进行测定，计算时相应修改；
②显色完成后应在 30 min 内完成测定；
