Detection Principle
蔗糖合成酶（分解方向SS-I）能够催化蔗糖和UDP生成果糖与UDPG，果糖与3,5-二硝基水杨酸反应生成棕红色氨基化合物，产物在540 nm处具有特征吸收峰，根据吸光值的变化即可表征蔗糖合成酶（分解方向SS-I）的活性。
